Simple Recipe: Crepes (straight from France!)

Last weekend, my cousins taught us to make Crepes via zoom. We had a BLAST and WOAH did the crepes turn out well. My cousins live in Switzerland but are half Italian, half Mexican and very well traveled. My cousin Jorge learned this recipe from a friend of his who is French, so apparently… it’s authentic! While my French accent is less than to be desired… I must say… with this recipe I made a pretty damn good French crepe!

The given recipe makes 10-15 crepes depending on the size of your pan.
We used an 11'“ pan and it made 12 crepes.

RECIPE:

2 3/8 cup flour

1/4 TSP baking soda

1 TBL sugar

3 eggs

1 3/4 cups water 

1 TSP Vanilla 

3/4 cup milk (we used oat milk)

INTRUCTIONS:

  • Mix Dry Ingredients

  • Add in wet ingredients and mix (dough should be thin but not runny)

  • Heat pan over medium-high heat

  • Coat pan with a thin layer of butter

  • Add batter (for the 11” pan I used 1 ladle or about 1/2 cup of batter per crepe. You want the batter to fill the pan in a thin layer).

  • Swirl pan so batter spreads across the entire surface into a circle

  • Flip crepe after about 1 min. (once it starts to bronze slightly)

  • Add filling and cook 1 more minute or until desired tenderness.

  • Fold and serve while hot

  • Goat Cheese/Brown Sugar

  • Nutella

  • Strawberry/Banana/ Chocolate

  • Peanut Butter/Banana

  • Lox / Goat Cheese (pictured)

  • Mushrooms / Goat Cheese

  • Scrambled eggs/ Cheddar / Pulled Chicken

  • Ham / Swiss

  • Spinach / Feta

  • Steak / Eggs

  • Prosciutto / Arugula / Mozzarella
